What are the common core standards for this project?
I do like your idea, and it seems appropriate for first grade. I just don't see your common core standards that you will use for this project.
How will you know if the students are able to identify verbs and nouns in a sentence? Will you use a rubric for their presentations to the class of their picture?
With 1 computer for every two students everyone will be able to use the computer and not paper. That is what they will want to do anyway. Forget the paper. The kids will like it better and you will save yourself considerable time scanning.
